Hi Gene, rice vinegar is gluten free, but some places use a malt-based vinegar for the sushi rice. Tempura is a no-go — wheat, not rice batter. Waaaah! It looks so good. You are correct about the soy sauce: tamari, pure soy sauce, is naturally GF, but regular soy sauce has wheat in it, often as the 2nd or 3rd ingredient.
